Vinification Maceration with traditional method of grape skins in contact for 8-10 days. First extraction with replacement of a part of the must and continuos pumping over up to the end of fermentation. Alcoholic fermentation at controlled temperature with selected yeasts.
Maturing 2-3 months in stainless steel containers - 12-14 months in french sessile oak casks - 8-10 months in bottles
Organoleptic features Colour dark red ruby, luminous. A strong impact and decisively sweet and compact scent with notes of red currant, hard black cherry and cocoa. Complex and strong in the mouth. Mellow, warm, alcoholic and well strengthened by freshness with a light minerality. Balanced and tannic to the right point
Producer’s recommendations Best coupling with complex first courses, stewed meat and game, cheese, salamis. To be served at 16-18°C
